Asparagus Omelet and Citrus Salad

Ingredients for Asparagus Omelet and Citrus Salad
- 10 ounces (280 g) of asparagus, cut into 1/3-inch (8 mm) pieces
- 1 1/2 cups (355 ml) of egg substitute
- 1/3 cup (33 g) of Parmesan cheese, finely grated
- 1/4 cup (25 g) of scallion, thinly sliced
- 1/4 teaspoon of black pepper
- 6 ounces (170 g) of mandarin oranges
- 3 cups (165 g) of Bibb lettuce
- 2 grapefruits cut into sections
- 6 tablespoons (100 g) of poppy seed dressing
How to Make Asparagus Omelet and Citrus Salad
Start with steaming the asparagus until it crisp/tender, about 5-6 minutes & drain. Whisk the egg substitute, black pepper and grated Parmesan cheese in a large bowl to blend it well. Spray a skillet with the nonstick vegetable oil spray.
Now, Sauté sliced scallions for 3-4 minutes or until it softened. Add than cooked asparagus and sauté until it heated through.
Now, reduce heat to medium; and spread the asparagus mixture in a single layer in the skillet. And then, pour the egg mixture over the asparagus.
After that, cook until the eggs are softly set, tilting skillet & gently running a rubber spatula around the edge to allow the uncooked egg to flow underneath, about 4-5 minutes.
Now, slide the omelet out onto a plate by folding in half. Now, cut omelet into wedges and serve.
