Mushroom Risotto

Ingredients for Breakfast Strata

  • 1 pound (450 g) of turkey sausage
  • 2 cups (470 ml) of egg substitute
  • 10 slices of whole wheat bread, cubed
  • 3 cups (700 ml) of skim milk
  • 1 cup (120 g) of low-fat cheddar cheese, shredded
  • One cup (160) of chopped onion
  • 1 cup (150 g) of chopped red bell pepper
  • 10 ounces (280 g) of frozen chopped broccoli, thawed
  • 2 tablespoons (30 g) of unsalted butter, melted
  • 2 tablespoons (16 g) of all-purpose flour
  • 1 tablespoon (8 g) of dry mustard
  • 2 teaspoons of dried basil

How to Make Breakfast Strata

In a large skillet, brown the sausage. Drain. In a large bowl, beat the egg substitute. Add remaining ingredients and mix it well.

Spoon into greased 13×9 inches (33×23 cm) of the baking pan. Cover and refrigerate for 8-9 hours or overnight. Preheat the oven to 350°F (180°C, or on gas mark 4). Bake for 60- 70 minutes or until knife inserted near center comes out clean properly.
