Ingredients for Butternut Squash Bisque

  • 1 tablespoon of canola oil
  • 1 tablespoon of unsalted butter
  • ½ cup of diced onion
  • ¾ cup of diced carrots
  • 4 cups of peeled and cubed butternut squash
  • 3 cups of vegetable stock
  • Salt and ground black pepper to taste
  • Ground nutmeg as per your taste
  • ½ cup of heavy cream

How to Make Butternut Squash Bisque

  1. First of all, heat the oil & melt the butter in a large pot over the medium heat. And then cook and stir the onion in the butter & oil under tender.
  2. After that mix the carrots and squash into the pot. Now pour in vegetable stock, and season with pepper, salt, and nutmeg. And now bring to a boil, reduce the heat, and simmer until the vegetables are tender.
  3. Now in a food processor or blender, puree the soup mixture until it smooth. And then return to the pot, and stir in the heavy cream. Now heat through, but do not boil. Serve it warm with a dash of nutmeg.
