Butternut Squash Soup

Hello friends, welcome to Smooth Recipe. Today we are going to make Butternut Squash Soup.

This Butternut Squash Soup is a thick and rich soup with tons of delicious flavor. Something I myself whipped up off the top of my head, with the things I had on hand. This is a super easy, quick, and a great way to use the squash. An awesome instant dish hit at my house.

Ingredients for Butternut Squash Soup

  • 2 tablespoons of butter
  • 1 small chopped onion
  • 1 medium chopped carrot
  • 2 medium cubed potatoes
  • 1 medium butternut squash – peeled, seeded, & cubed
  • One stalk chopped celery
  • 1 (30 fluid ounce) container chicken stock
  • Fresh and salty ground black pepper as per your taste

How to Make Butternut Squash Soup

  1. First of all melt the butter in the large pot, and cook the celery, carrot, onion, potatoes, and squash them for 5 minutes, or until it turns light brown in color.
  2. And then pour in enough of the chicken stock to cover the vegetables. Now bring to a boil. And reduce heat to low, cover the pot, and simmer 35-40 minutes, or until all the vegetables are tender.
  3. Now transfer the soup to the blender, and blend them until it become smooth. Now return to the pot, and mix it in any remaining stock to attain the desired consistency. You can add season like salt and pepper as per your taste.
