California Italian Wedding Soup

Hello friends, welcome to Smooth Recipe. Today we are going to make California Italian Wedding Soup.

This is my special variation of a standard soup recipe. I like it with fresh basil and a little lemon rind to it, so those are my only basic changes for this soup. This is a very quick and easy soup with delicious flavors that impress all.

Japanese Soup with Tofu and Mushrooms

Ingredients for California Italian Wedding Soup

  • ½ pound of extra-lean ground beef
  • 1 egg, lightly beaten
  • 2 tablespoons of shredded fresh basil leaves
  • 1 tablespoon of chopped Italian flat leaf parsley
  • 1 zested lemon
  • ½ cup of uncooked orzo (rice-shaped pasta)
  • 2 medium (4-1/8″ long)s sliced green onions
  • 2 tablespoons of Italian-seasoned breadcrumbs
  • 1 tablespoon of grated Parmesan cheese
  • 5 ¾ cups of chicken broth
  • 2 cups of finely sliced escarole (you may can use spinach substitute)
  • Use Grated Parmesan cheese for topping

How to Make California Italian Wedding Soup

  • First of all mix them together the meat, bread crumbs, egg, cheese, parsley, basil, and green onions; shape them into 3/4 inch balls.
  • Now pour broth into a large saucepan over the high heat. When it boiling, drop the meatballs in it. And then stir in escarole, orzo, and lemon zest.
  • Now return to a boil; and reduce heat from high to medium. And cook at a slow boil for approx. 10 minutes or until orzo is tender, and stirring frequently. Now your California Italian Wedding Soup is ready serve it by sprinkled cheese on it.
