Caramilk Cheescake

Hello friends,of Smooth Recipe. Today we are going to make caramilk cheescake! The cheesecake has a soft and cheesy vanilla centre. Topped with a creamy Caramilk ganache. Great for dessert or as a snack!

Ingredients for Caramilk Cheescake

  • 125ml thickened cream, plus 80ml extra 
  • 450g Caramilk chocolate, in pieces
  • 200g biscuits
  • 80g butter, melted
  • 500g cream cheese, at room temperature
  • 100g caster sugar
  • 2 teaspoons vanilla bean paste
  • 2 eggs

Directions for making Caramilk Cheescake

First of all, Preheat oven to 170C/150C fan-forced. Line the base and side of a 20cm round springform pan with baking paper. Then put the cream and 250 g of the caramel in a small saucepan over low heat. Cook and stir until the chocolate has melted and the mixture is smooth. Set aside to cool slightly.

Break the cookies in a food processor. Process until finely ground. Add the butter and process until everything is blended. Use the back of a spoon to press the mixture firmly over the bottom of the prepared pan. Then place the pan in the fridge for 15 minutes to cool.

Use electric beaters to beat the cream cheese, sugar and vanilla in a bowl until smooth. Beat in the eggs, 1 at a time, until combined. Add the melted caramel mixture and beat until just blended. Pour this into the prepared pan and bake for 40 minutes until just hardened.

Now turn off the oven. Leave the cheesecake in the oven with the door ajar and let the cheesecake cool completely for 2 hours. Then transfer the cheesecake to the refrigerator and let it cool overnight until firm. Remove cheesecake from the pan. Remove the cheesecake from the pan. And cut the cake into pieces with a sharp knife. Enjoy it!
