All types of your favorite taco fixings can be found in this crowd-pleasing casserole. Plus, it uses the convenience products like veggies and canned soup, cooked chicken and taco seasoning mix which make it a snap to prepare. It is loaded with the fantastic flavor and on the table in less than an hour!

Ingredients for Making Chicken Taco Casserole

  • 4 cups of shredded, cooked chicken
  • 2 (10.75 ounce) cans of Condensed Cream of Chicken Soup (Regular or 98% Fat Free)
  • 1 cup of light sour cream
  • 1 (10 ounce) can of diced tomatoes and green chiles, undrained
  • One (15 ounce) can of black beans, rinsed and drained
  • 1 (1 ounce) envelope of reduced-sodium taco seasoning mix
  • 5 cups of coarsely crushed tortilla chips
  • 2 cups of shredded Cheddar cheese
  • Chopped tomato
  • Sliced green onion
  • Chopped fresh cilantro leaves

How to Make Chicken Taco Casserole

  1. First of all heat the oven to 350 degrees F. Lightly grease a 13x9x2-inches of baking dish. Stir the chicken, sour cream, soup, green chiles and tomatoes, beans and seasoning mix in a large bowl.
  2. And then layer half the chicken mixture, 3 cups of tortilla chips and half of the cheese in the baking dish. Layer with the remaining chicken mixture & tortilla chips. And then cover the baking dish.
  3. Now bake for 30 minutes. Uncover the baking dish. And sprinkle with the remaining cheese.
  4. In the end, bake, uncovered, for 10-11 minutes or until hot & bubbling and the cheese are melted. And then sprinkle with the green onion, chopped tomato, and cilantro before serving, if desired.
