Hello friends, welcome to Smooth Recipe. Today we are going to make Chicken Tacos.

A great change from a regular Mexican style tacos. A cool summer dinner, made quick with the leftover rotisserie chicken. Naturally you can use any type of the chicken cooked the way you just like to have; just be sure to shred it for the real tacos.

Quick and Easy Brownies

Ingredients for Making Chicken Tacos

  • ½ cup of ranch dressing
  • ¼ cup of reduced-fat sour cream
  • 1 (1 ounce) packet of taco seasoning mix, divided
  • 1 tablespoon of mild chunky salsa
  • 2 cups of shredded rotisserie chicken
  • 8 (6 inch) of corn tortillas
  • Shredded lettuce
  • 1 chopped tomato
  • 4 sliced green onions
  • 1 (4 ounce) can of sliced black olives
  • One avocado – peeled, pitted and diced (Optional ingredient)
  • 1 cup of shredded Colby-Monterey Jack cheese

How to Make Chicken Tacos

  1. First of all combine sour cream, 1 teaspoon taco seasoning, ranch dressing, and salsa in a small bowl. Cover & refrigerate until serving.
  2. Now toss the chicken with remaining taco seasoning. Cover the bowl loosely with plastic wrap or wax paper. Microwave the chicken until chicken is heated through, about 2-3 minutes.
  3. In the end, warm the tortillas in a skillet for about a minute on each of the side to make them pliable. Now place a scoop of chicken on the tortilla & top with lettuce, olives, green onion, avocado, tomato, cheese, and a spoonful of the ranch dressing mixture.
