Chicken Tortilla Soup Recipe

Hello friends, welcome to Smooth Recipe. Today we are going to make Chicken Tortilla Soup.

This is an easy to make soup that is quite good in taste. Fresh chicken and tortilla chips with vegetables make this more delicious, warm soup. You can also try garnishing with cheese and/or a little bit of sour cream.

Ingredients for Chicken Tortilla Soup Recipe

  • 2 breast half, bone & skin removed (blank)s skinless, boneless chicken breasts, cut them into cubes
  • ½ teaspoon of olive oil
  • ½ teaspoon of minced garlic
  • One cup of frozen corn kernels
  • ¼ teaspoon of ground cumin
  • 2 (14.5 ounce) cans of chicken broth
  • 1 cup of chopped onion
  • ½ teaspoon of chili powder
  • 1 tablespoon of lemon juice
  • 1 cup of chunky salsa
  • 8 ounces of corn tortilla chips
  • ½ cup of shredded Monterey Jack cheese

How to Make Chicken Tortilla Soup Recipe

First of all, in a large pot over the medium heat, cook and stir the chicken in the oil for 5-7 minutes. And then add the garlic and cumin and mix them well. Then add the broth, onion, corn, lemon juice, chili powder, and salsa. Reduce the heat to low and simmer for about 20-30 minutes.

In the end, break up some tortilla chips into the individual bowls and pour soup over the chips. Now top with the Monterey Jack cheese and a small amount of sour cream.
