Chorizo & mozzarella gnocchi bake
Hello friends,of Smooth Recipe. Today we are going to make Chorizo & mozzarella gnocchi bake. A cheesy tomato pasta with gnocchi, chorizo and mozzarella that makes an excellent midweek meal.

Ingredients for Chorizo & mozzarella gnocchi bake
- 600g fresh gnocchi
- 120g chorizo, diced
- 125g mozzarella ball, cut into chunks
- 1 teaspoon olive oil
- 1 onion, finely chopped
- 2 garlic cloves, crushed
- 2 x 400g cans chopped tomatoes
- 1 teaspoon caster sugar
- small bunch of basil, torn
- green salad to serve
Directions for making Chorizo & mozzarella gnocchi bake
Heat the oil in a medium saucepan over medium heat. Saute the onion and garlic for 8-10 minutes until soft. Add the chorizo and cook for a further 5 minutes. Add the tomatoes and sugar and season to taste. Bring to a boil, then add the gnocchi and cook for 8 minutes, stirring often, until soft. Heat the grill to high.
Stir ¾ of the mozzarella and most of the basil into the gnocchi. Divide the mixture between six ovenproof tins, or place in an oven dish. Sprinkle with the remaining mozzarella and grill for 3 minutes, until the cheese is melted and golden brown. Season, sprinkle with the remaining basil and serve with a green salad. Enjoy your meal!
