  • 3 eggs
  • 2 cups white sugar
  • 1 cup vegetable oil
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • ¼ teaspoon baking powder
  • 2 cups shredded zucchini
  • 1 cup dried cranberries
  • One zested orange
  • 1 teaspoon lemon extract
  • 2 teaspoons ground cinnamon
  • 1 teaspoon ground cloves
  • One teaspoon ground nutmeg
  • 1 teaspoon salt
  • 1 pinch ground ginger

How to Make Citrus Cranberry Zucchini Bread

  1. First of all, preheat the oven to 325 degrees F (165 degrees C). and then grease two 8×4-inches loaf pans.
  2. Now combine the baking soda, flour, and baking powder in the small bowl. Beat the eggs with the sugar in a large bowl until it well mixed; beat in the oil.
  3. And then stir the zucchini, orange zest, cranberries, and lemon extract into the egg mixture. Add the cinnamon, nutmeg, salt, cloves, and ginger.
  4. Stir the flour mixture into the zucchini mixture until the batter is well blended. Pour the batter into the already prepared loaf pans.
  5. In the end, bake in the preheated oven until the toothpick inserted into the center comes out clean properly, 50- 60 minutes. Cool in the pans for about 10-12 minutes before removing to cool down completely on a wire rack.
