  • 1 tablespoon clear honey
  • 1 tablespoon olive oil
  • 1 celery stick, finely chopped
  • Optional: large handful basil leaves, torn

Directions for making classic lasagna

Heat the oil in a large pan. Use kitchen scissors to cut the bacon into small pieces, or use a sharp knife to chop it on a cutting board. Add the bacon to the pan and cook for a few minutes until it begins to turn golden brown. Add the onion, celery and carrot and cook over medium heat for 5 minutes, stirring occasionally, until soft. Add the garlic and cook for 1 minute, then add the ground beef and cook, stirring and breaking with a wooden spoon, about 6 minutes until browned all over. Stir in the tomato paste and cook for 1 minute, mixing well with the meat and vegetables. Put in the chopped tomatoes. Fill each can halfway with water to rinse out any tomatoes left in the can and add to the pan. Add the honey and season to taste. Simmer for 20 min.

Preheat the oven to 200C/180C Fan/Gas 6. To assemble the lasagna, pour a little of the ragu sauce onto the bottom of the roasting tin or baking dish and spread the sauce over the entire bottom. Lay 2 sheets of lasagna on top of the sauce overlapping to make it fit, then repeat with more sauce and another layer of pasta. Repeat with 2 more layers of sauce and pasta, finishing with a layer of pasta. Place the crème frache in a bowl and mix with 2 tbsp water to loosen and make a smooth pourable sauce. Pour this over the pasta and top with the mozzarella. Sprinkle Parmesan cheese on top and bake for 25-30 minutes until golden brown and bubbly. Serve sprinkled with basil if desired. Enjoy your meal!
