Cream of Asparagus Soup

Friends, I always find myself smiling whenever I see asparagus are arriving in the grocery store because it means spring season is on the way.
Our today’s recipe of cream of asparagus soup is a simple and sober way to connect the changing of the seasons, and this is the non-dairy version utilizes a luxurious and rich cashew “cream” soup.

Ingredients for Cream of Asparagus Soup
- 2 tablespoons of olive oil
- 1 leek, rinsed and chopped 1-inches (2.5 cm) of pieces
- 5 cups of (680 g) asparagus
- 4 cups of vegetable broth or vegan “chicken” broth whichever you like
- ½ teaspoon of sea salt
- 2 tablespoons of lemon juice
- ⅓ cup of (54 g) raw cashews, soaked for at least 4 hours
- ⅓ cup of (90 ml) water
- 2 teaspoons of chopped fresh chives, to serve
- ¼ teaspoon of freshly ground black pepper
How to Make Cream of Asparagus Soup
- First of all heat the oil in a medium size saucepan on medium heat. Add the leeks into it and cook until it softened, about 10-12 minutes.
- Cut the woody ends off the asparagus and chop the spears into 2-inches (5-cm) of pieces. Now add to the saucepan with the lemon juice, broth, and salt & pepper. Bring them to a boil, and then reduce heat to a low flame and cook for 10-12 minutes until your asparagus is tender.
- Remove ¼ cup (50 grams) of the asparagus tips and reserve them. Now using either an immersion blender or standing blender (in batches), puree the soup.
- Now drain the cashews from the soaking water and add a fresh ⅓ cup (80 ml) of water in the cashews and blend them until it become smooth. Add “cream” to the soup, stir it well, and return to boil. After that, remove from the heat and serve in the shallow bowls garnished with the reserved fresh chives and asparagus tips.
