Hello friends, welcome to Smooth Recipe. Today we are going to make Creamy Corn Soup.

This creamy corn soup is really very easy to make, lower in the fat than most of the cream soups, and delicious – especially if you are fighting off a cold! Try adding some chopped green chili pepper sauteed in the initial onion mixture or some small slices of chicken stirred in it.

Chicken Enchilada Slow Cooker Soup

Ingredients for Creamy Corn Soup

  • ½ chopped onion
  • 1 clove of minced garlic
  • ¼ cup of chopped fresh parsley
  • 1 tablespoon of margarine
  • 3 tablespoons of all-purpose flour
  • 2 ½ cups of milk
  • 1 cup of chicken broth
  • 2 (12 ounce) cans of whole kernel corn
  • 2 ½ tablespoons of cream cheese
  • 1 teaspoon of garlic salt
  • 1 teaspoon of ground black pepper
  • Ground cayenne pepper as per your taste

How to Make Creamy Corn Soup

  1. First of all, in a large pot over medium heat, combine the onion, parsley garlic, and margarine or butter. Saute for about 4-5 minutes, or until the onions are tender.
  2. Now add the flour, and stirring well, to make a pasty mixture. Whisk in the milk & the broth. After that add the cream cheese and the corn and allow to heat through.
  3. In the end, add the garlic, black pepper salt, and cayenne pepper as per your taste. Stir together and serve it hot.
