Ingredients for Creamy courgette & bacon pasta
- 1 olive oil
- 4 courgettes, coarsely grated
- 150g diced pancetta or smoked bacon lardons
- 1 garlic clove, crushed
- one handful freshly grated parmesan
- 300g tagliatelle
- 1 small tub (200g) low-fat crème fraîche
Directions for making Creamy courgette & bacon pasta
Heat the olive oil in a large frying pan and fry the pancetta or bacon for about 5 minutes until they start to crisp up. Increase the heat and add the grated zucchini to the pan. Cook for 5 minutes or until they begin to soften and brown, then add the garlic and cook for a further minute. Spice and set aside.
Cook the tagliatelle according to the instructions on the package and scoop out a cup of cooking water. Drain the tagliatelle and place in the frying pan with bacon and zucchini. Stir everything together over low heat with the crème frache and half of the Parmesan cheese, and add a dash of pasta water if you want to loosen the sauce. Season to taste and serve turned upside down in bowls with the remaining Parmesan cheese on top. Enjoy your meal!
