French Lentils with Asparagus and Shallots

Hello friends, welcome to Smooth Recipe. Today we are going to make one of my favorite French Lentils with Asparagus and Shallots.

This dish makes for a light yet hearty main when served alongside a leafy salad and some crusty bread. If French lentils aren’t available, brown or green lentils can be substituted.

This is like a summery dish which I love to cook. So friends, without wasting anytime let’s start making it.

Shaved Asparagus and Roasted Tomato Tartine

Preparation time: 10 Minutes

Cooking time: 30 Minutes

Ingredients for French Lentils with Asparagus and Shallots

  • 1 cup (200 g) of French lentils
  • 3 cups (750 ml) of water
  • 2 tablespoons of extra virgin olive oil
  • 3- 4 small shallots, skins removed & thinly sliced juice of 1 lemon
  • 1 bunch (about 12 oz (350 g)) of asparagus and remove its woody ends
  • Sea salt & freshly ground black pepper
  • 1 avocado, sliced, to serve
  • Lemon wedges to serve

How to Make French Lentils with Asparagus and Shallots

  1. Rinse the lentils well under running water. In a small pan, bring the lentils and water to a rolling boil, stir, reduce heat, and simmer for 25 to 30 minutes, or until the lentils are tender. Season the lentils with a few pinches of salt. Drain off any remaining liquid and set aside.
  2. Meanwhile, heat the olive oil in a large skillet. Add the shallots and cook over medium-low heat for 15 minutes, stirring frequently.
  3. Raise the heat to medium-high and add the lemon juice and asparagus. Cook for 5 to 7 minutes, until the asparagus brightens and is easily pierced with a fork.
  4. Add the cooked lentils to the pan, season to taste, and heat through.
  5. Serve warm, topped with sliced avocado and lemon wedges.
