Greek Lentil Soup

Hello friends, welcome to Smooth Recipe. Today we are going to make Greek Lentil Soup.

A fake (pronounced as a ‘Fah-kehs’) is a staple in the Greek kitchen, and an especially the filling meal. It is a traditionally served with a drizzle of olive oil & lots of vinegar.

Though the vinegar is of course optional, try it and you will love it. It lifts the lentils and adds the dimension of flavor.

Low Carb Cauliflower Leek Soup

Ingredients for Greek Lentil Soup

  • 8 ounces of brown lentils
  • ¼ cup of olive oil
  • 1 tablespoon of minced garlic
  • 1 minced onion
  • One large chopped carrot
  • 1 quart of water
  • 1 pinch of dried oregano
  • One pinch of crushed dried rosemary
  • 2 eaches of bay leaves
  • 1 tablespoon of tomato paste
  • Salt and ground black pepper as per your taste
  • 1 teaspoon of olive oil, or as per your taste
  • 1 teaspoon of red wine vinegar, or as per your taste

How to Make Greek Lentil Soup

  1. First of all, place lentils in the large saucepan; add enough water to cover 1 inch of saucepan. Bring water to boil and cook until it tender, about 10-12 minutes; and then drain.
  2. After that, heat olive oil in a saucepan over the medium heat. Add onion, garlic, and carrot; cook and stir until the onion has softened and turned translucent, about 5-6 minutes.
  3. Now pour in lentils, 1 quart water, rosemary, oregano, and bay leaves. And then bring to a boil. Now reduce heat to medium-low flame, cover, and simmer for 10-12 minutes.
  4. In the end, stir in tomato paste & season with salt & pepper. Cover & simmer until the lentils have softened 30- 40 minutes, stirring it occasionally. You can add
  5. additional water if you think that the soup becomes too thick. Drizzle with 1 teaspoon olive oil & red wine vinegar as per your taste.
