Hello friends, welcome to Smooth Recipe. Today we are going to make Grilled Asparagus with Roasted Garlic Toast and Balsamic Vinaigrette. Uhhh, a very big name for a dish and I can bet on this, that the taste will also be very delicious.

This is one of my favorite delicious recipes during the spring season. Even the asparagus haters will love this dish for sure. And I am sure they do! This is a super easy side dish which helps around out most with any meal.

Zesty Marinated Asparagus

Ingredients for Grilled Asparagus with Roasted Garlic Toast and Balsamic Vinaigrette

  • 1 medium head of unpeeled garlic
  • 5 tablespoons of extra virgin olive oil
  • Salt and pepper as per your taste
  • 2 tablespoons of minced shallot
  • 1 ½ pounds of thick stemmed asparagus
  • 4 slices of sourdough bread
  • 1 ½ teaspoons of balsamic vinegar
  • ½ teaspoon of red wine vinegar

How to Make Grilled Asparagus with Roasted Garlic Toast and Balsamic Vinaigrette

  • Preheat the oven to 350 degrees F (175 degrees C).
  • Now coat the head of the garlic with 1 tablespoon olive oil, pepper, and salt. And then place on a baking sheet, and roast for 40-45 minutes in the already preheated oven, until it becomes golden brown in color.
  • Once the garlic is roasted, cut it from the head in half horizontally which exposing all the cloves. Now squeeze both halves of the garlic into a bowl by discarding any skin left. After that whisk 2 tablespoons of olive oil, pepper, and salt. And set them aside.
  • While the garlic is getting roasting, place the minced shallot in the bowl with the red wine vinegars and balsamic for about 30-35 minutes to let the flavors blend properly.
  • Now whisk in the remaining olive oil, and season with pepper and salt. After that place the asparagus spears in the mixture until it ready to grill.
  • First preheat the grill for medium to high heat.
  • Now place the asparagus in a large skillet or directly on to the grill. And then grill the asparagus; turn it over occasionally, until tender, about 10-12 minutes.
  • While the asparagus is grilling, till then spread the roasted garlic mixture over the bread. Grill the bread until it toasted.
  • After that arrange the bread and asparagus on a plate, and drizzle it with the remaining shallot & vinegar mixture.
