Ingredients for Grilled Radishes, Zucchini, and Asparagus with Herbed Mayo

  • 6 to 8 radishes
  • 1 zucchini
  • 12-15 asparagus spears
  • Sea salt
  • Olive oil

For The Herbed Mayo

  • 1 cup of (250 ml) vegan mayonnaise
  • ¼ cup of (10 g) fresh basil
  • 2 sprigs of fresh thyme
  • One tablespoon of fresh chives
  • 1 tablespoon of fresh parsley

How to Make Grilled Radishes, Zucchini, and Asparagus with Herbed Mayo

  1. First of all, heat your barbecue grill to high. Now, trim the greens from all the radishes, leaving only an inch or two. And then, slice the zucchini and snap off the woody ends of asparagus. Now place the vegetables in a big dish and drizzle with oil. And then toss to coat and sprinkle with light amount of salt.
  2. Now grill all the vegetables in a grill basket while barbecue cover open, until it tender and starting to char. You may need to cook them into 2 batches—if so, then keep them warm on the warming shelf in your barbecue, or in the oiled baking dish covered with the foil.
  3. Now, for the herbed mayo, chop the herbs properly and mix them with the vegan mayonnaise in a small bowl. And then serve alongside with the veggies for dipping.

Do not toss those already chopped radish greens, you can use them in your next food prepare of fresh pesto.
