Ingredients for making Italian Sausage Soup with Tortellini

  • 1 pound of sweet Italian sausage, casings removed
  • 1 cup of chopped onion
  • 2 cloves of garlic, minced
  • 5 cups of beef broth
  • ½ cup of water
  • ½ cup of red wine
  • 4 large tomatoes – peeled, seeded and chopped
  • 1 cup of thinly sliced carrots
  • ½ tablespoon of packed fresh basil leaves
  • ½ teaspoon of dried oregano
  • 1 (8 ounce) can of tomato sauce
  • 1 ½ cups of sliced zucchini
  • 8 ounces of fresh tortellini pasta
  • 3 tablespoons of chopped fresh parsley

How to Make Italian Sausage Soup with Tortellini

  1. First of all, in a 5 quart Dutch oven, brown sausage. Remove the sausage & drain, reserving 1 tablespoon of drippings.
  2. Now saute onions & garlic in drippings. Stir in the water, beef broth, wine, tomatoes, carrots, oregano, basil, tomato sauce, and sausage. And then bring to a boil. Reduce the heat to simmer flame uncovered for 30 minutes.
  3. In the end, skim fat from the soup. Stir in the zucchini and parsley. Simmer covered for 28-30 minutes. And then add the tortellini during the last 10-12 minutes. Sprinkle with the Parmesan cheese on the top of each serving.
