Ingredients for making Italian Sausage Soup

  • 1 pound of Italian sausage
  • 1 clove of minced garlic
  • 2 (14 ounce) cans of beef broth
  • 1 (14.5 ounce) can of Italian-style stewed tomatoes
  • One cup of sliced carrots
  • 1 (14.5 ounce) can of great Northern beans, undrained
  • 2 small cubed zucchini
  • 2 cups of spinach – packed, rinsed and torn
  • ¼ teaspoon of ground black pepper
  • ¼ teaspoon of salt

How to Make Italian Sausage Soup

  1. First of all, in a Dutch oven or stockpot, brown sausage with garlic. Stir in the broth, tomatoes & carrots, and season with the salt & pepper. Reduce heat, cover it, and simmer for about 15 minutes.
  2. Now, stir in beans with liquid & zucchini. Cover, and simmer for another 15 minutes or so, or until the zucchini is tender.
  3. In the end, remove from the heat & add spinach. Replace the lid allowing the heat from the soup to cook the leaves of spinach. Your soup is ready to serve after 4-5 minutes.
