  • 1 ½ teaspoons baking soda
  • 1 teaspoon salt
  • 4 eggs
  • 1 ½ cups white sugar
  • 1 cup vegetable oil
  • ½ cup plain yogurt
  • 1 small lemon, zested
  • 1 tablespoon lemon juice
  • 2 teaspoons vanilla extract
  • 2 cups grated zucchini
  • 1 cup chopped pistachio nuts

How to Make Lemon Pistachio Zucchini Bread

  1. First of all, preheat the oven to 350 degrees F (175 degrees C). And then spray two 9×5-inches loaf pans with the cooking spray.
  2. Now mix the baking soda, flour, and salt in the bowl. Beat the eggs, sugar, and vegetable oil all together in the bowl.
  3. After that stir in lemon zest, yogurt, lemon juice, and in the vanilla extract. Gradually stir the flour mixture into the wet ingredients until they just moistened; fold the zucchini and pistachios into the batter. Pour the batter evenly into the already prepared loaf pans.
  4. In the end, bake it in the preheated oven until the toothpick inserted into the center comes out neat and clean, 50-60 minutes. Let the pans cool down for 10-15 minutes before removing from cool completely on the wire rack.
