  • 1 ½ cups of shredded zucchini
  • 1 teaspoon of ground cinnamon
  • ¾ cup of white sugar
  • 1 egg
  • ½ cup of vegetable oil
  • 1 ½ cups of all-purpose flour
  • ¼ teaspoon of baking powder
  • 2 teaspoons of lemon zest
  • ½ teaspoon of salt
  • ½ teaspoon of baking soda

How to Make Lemon Zucchini Bread

  1. First of all, preheat oven to the 325 degrees F (165 degrees C) and then grease an 8×4 inches of loaf pan.
  2. Now, in a bowl, beat them together the sugar, zucchini, egg, and oil. In the separate bowl, sift together the salt, flour, baking soda, and the baking powder; stir into the cinnamon and the lemon zest. And then stir the flour mixture into zucchini mixture just until it blended. Now pour the batter into the prepared pan.
  3. In the end, bake for 50 minutes in the already preheated oven, until the knife inserted in the center and comes out clean. After that, remove from the heat, and let it cool down for about 10-12 minutes before turning out into a wire rack to cool down completely.
