Hello friends, welcome to Smooth Recipe. Today we are going to make Lentil Soup.

This is one of the best hearty lentil soup, chock with full of vegetables and very yummy. You can serve this lentil soup with warm cornbread. a perfect soup with fresh crusty bread for the dipping.

Broccoli Cheese Soup

Ingredients for Lentil Soup

  • 1 chopped onion
  • ¼ cup of olive oil
  • 2 medium (blank)s diced carrots
  • 2 stalks chopped celery
  • 1 teaspoon of dried oregano
  • 2 cloves minced garlic
  • 1 bay leaf
  • 2 cups of dry lentils
  • 1 teaspoon of dried basil
  • 1 (14.5 ounce) can of crushed tomatoes
  • 8 cups of water
  • ½ cup of spinach, rinsed and thinly sliced
  • 2 tablespoons of vinegar
  • Salt as per your taste
  • Ground black pepper as per your taste

How to Make Lentil Soup

  1. First of all, in a large soup pot, heat oil over the medium heat. Add carrots, onions, and celery; cook & stir until onion is tender. Stir in bay leaf, oregano, garlic, and basil; cook for 2-3 minutes.
  2. Now stir in lentils, and add the water and tomatoes. Bring to a boil. Reduce the heat, and simmer for at least 50-70 minutes. When the soup is ready to serve then stir in spinach, and cook until it wilts.
  3. Now stir in vinegar and season as per your taste with salt and pepper, and more vinegar if you desired.
