Ingredients for Making Tasty Lentil Tacos

  • 1 teaspoon of canola oil
  • ⅔ cup of finely chopped onion
  • 1 small minced clove garlic
  • ⅔ cup of rinsed dried lentils
  • 1 tablespoon of taco seasoning, or as per your taste
  • 1 ⅔ cups of chicken broth
  • ⅔ cup of salsa
  • 12 taco shells

How to Make Tasty Lentil Tacos

  1. First of all, heat oil in a skillet over the medium heat; cook and stir garlic and onion until tender, about 4-5 minutes. Mix the lentils and taco seasoning into the onion mixture; cook and stir for 1-2 minute.
  2. After that, pour chicken broth into skillet and bring it to a boil. Reduce the heat to low flame, cover the skillet, and simmer until the lentils are tender, 25- 30 minutes.
  3. Now uncover the skillet and cook until the mixture is slightly thickened, 6- 8 minutes. Mash lentils slightly; and stir in salsa.
  4. In the end, serve about 1/4 cup lentil mixture in each of the taco shell.
