Ingredients for Low Carb Cauliflower Leek Soup

  • 2 tablespoons of olive oil
  • 3 tablespoons of butter
  • 3 leeks, cut into 1 inch pieces
  • 1 large head of chopped cauliflower
  • 3 cloves of finely chopped garlic
  • 8 cups of vegetable broth
  • Salt and freshly ground black pepper as per your taste
  • 1 cup of heavy cream

How to Make Low Carb Cauliflower Leek Soup

  1. First of all, heat the olive oil & butter in a large pot over the medium heat flame, and saute the leeks, cauliflower, and garlic for about 10-12 minutes.
  2. After that, stir in the vegetable broth, and bring the mixture to boil. Reduce the heat, cover, and simmer 40-45 minutes.
  3. In the end, remove the soup from heat. Blend the soup with hand mixer or immersion blender. Season it with salt and pepper and then mix in the heavy cream, and continue blending until it smooth.
