Meatball – tomato soup

Hello friends of Smooth Recipe. Today we are going to make an meatball – tomato soup. This soup is healthy, a low calorie tomato soup. The addition of meatballs and giant couscous means it’s filling too.

Ingredients for Meatball – tomato soup

  • 2 x 400g cans chopped tomatoes
  • 500ml hot vegetable stock
  • 100g giant couscous
  • 150g baby spinach
  • 12 pork meatballs
  • 2 red peppers, deseeded and sliced
  • 1 garlic clove, crushed
  • 1 onion, finely chopped
  • ½ teaspoon chilli flakes
  • ½ small bunch of basil
  • 1½ tablespoon rapeseed oil
  • Optional: grated parmesan, to serve

Directions for making Meatball – tomato soup

Heat the oil in a saucepan. Saute the onion and peppers for 7 minutes, then stir in the garlic and chilli flakes and cook for 1 minute. Add the tomatoes, giant couscous and vegetable stock and bring to a boil.

Then season to taste and then add the meatballs and spinach. Let it simmer for another 5-7 minutes until cooked through. Ladle into bowls and garnish with basil. You can add some Parmesan cheese if you like. Enjoy your meal!
