Ingredients for Mini Frittatas with Quinoa

  • 1 ½ cups of water
  • ¾ cup of quinoa, rinsed and drained
  • 2 eggs
  • 2 egg whites
  • 1 cup of shredded Swiss cheese
  • 1 cup of shredded zucchini
  • ½ cup of diced ham
  • ¼ cup of chopped fresh parsley
  • 2 tablespoons of grated Parmesan cheese
  • ¼ teaspoon of ground white pepper

How to Make Mini Frittatas with Quinoa

  1. First of all, preheat oven to the 400 degrees F (200 degrees C). And grease 6 muffin cups.
  2. Now bring the quinoa & water to a boil in a saucepan. Reduce the heat to medium-low flame and cover, and simmer it until the quinoa is tender & the water has been absorbed, 15- 20 minutes.
  3. After that, combine the cooked quinoa, eggs, zucchini, egg whites, ham, parsley, Parmesan cheese, Swiss cheese, and white pepper in the large bowl and mix until it thoroughly combined. Spoon the mixture to the top of each of the prepared muffin cup.
  4. In the end, bake in the preheated oven until the edges of the frittatas are golden brown in color, for about 30 minutes. Allow to cool it down for at least 5 minutes in the pan before it gets served. Serve it hot or cold.
