Ingredients for making One Pan Orecchiette Pasta

  • 2 tablespoons of olive oil
  • ½ diced onion
  • Salt as per your taste
  • 8 ounces of spicy Italian sausages, casings removed
  • 1 ¼ cups of orecchiette pasta, or more to taste
  • ½ cup of roughly chopped arugula, or to taste
  • 3 ½ cups of low-sodium chicken broth, divided, or as per your requirement
  • ¼ cup of finely grated Parmigiano-Reggiano cheese, or as per your taste

How to Make One Pan Orecchiette Pasta

  1. First of all, heat the olive oil in a large and deep skillet over the medium heat flame. Cook and stir the onion with a pinch of salt in the hot oil until the onion is soft and golden in color, 5-7 minutes. Stir the sausage into onions; cook & stir until the sausage is broken up and browned in color, 5-7 minutes.
  2. Now pour 1 1/2 cups of chicken broth into the sausage mixture & bring to a boil while scraping the browned bits of the food off of the bottom of the pan with the wooden spoon. Add the orecchiette pasta; cook & stir the pasta in the hot broth, adding the remaining broth when the liquid is absorbed, until the pasta is cooked through and most of the broth is absorbed, for about 14-15 minutes.
  3. In the end, stir the arugula into the pasta-sausage mixture until the arugula wilts. Ladle pasta into the bowls and dust with the Parmigiano-Reggiano cheese.
