Ingredients for Pesto Shrimp Pasta

  • 1 (8 ounce) package of spaghetti
  • 1 cup of fresh basil leaves
  • ¼ cup of lemon juice
  • 3 tablespoons of olive oil
  • 1 clove of garlic, or to taste
  • ½ teaspoon of salt
  • 2 teaspoons of olive oil
  • 1 (8 ounce) package of sugar snap peas
  • ¾ pound of peeled and shrimp
  • ⅛ teaspoon of crushed red pepper

Directions for making Pesto Shrimp Pasta

  1. First of all, bring a large pot of the lightly salted water to the boil. Cook the spaghetti in the boiling water, stirring it occasionally until it cooked through but firm to the bite, for about 10-12 minutes; and then drain.
  2. Now, blend lemon juice, basil, 3 tablespoons olive oil, garlic, and salt in the blender until smooth.
  3. After that, beat 2 teaspoons of olive oil in the skillet over the medium heat. Cook and stir the sugar snap peas in the hot oil until tender, for about 4-5 minutes. Add the shrimp and red pepper; continue to cook until shrimp are bright pink in color on the outside and the meat is no longer transparent in the center, for about 4-5 minutes. Stir the basil sauce into the shrimp mixture & remove from the heat; spoon over the spaghetti to serve.
