This pumpkin soup is delicious, cream-like soup can be served with lunch or with dinner. A perfect soup for winter season and also served at our family’s Thanksgiving and Christmas dinner every year.

Ingredients for Making Pumpkin Soup

  • 6 cups of chicken stock
  • 1 ½ teaspoons of salt
  • 4 cups of pumpkin puree
  • 1 teaspoon of chopped fresh parsley
  • 1 cup of chopped onion
  • ½ teaspoon of chopped fresh thyme
  • 1 clove of minced garlic
  • ½ cup of heavy whipping cream
  • 5 eaches of whole black peppercorns

How to Make Pumpkin Soup

  1. First of all, heat stock, pumpkin, thyme, onion, garlic, salt, and peppercorns. Bring all of them to a boil, reduce the heat to low, and simmer for 30-35 minutes uncovered.
  2. And then puree the soup in the small batches (1 cup at a time) using a blender or food processor.
  3. In the end, return to pan, and bring to a boil again. Now reduce the heat to low, and simmer for another 30-35 minutes, uncovered. Stir in the heavy cream. Pour into the soup bowls and garnish with the fresh parsley.
