Russian Mushroom and Potato Soup

Hello friends, welcome to Smooth Recipe. Today we are going to make Russian Mushroom and Potato Soup.

I make this soup every Halloween and in winter too, and this is the ‘signal’ to the family that the cool weather has arrived and get prepare for some delicious soup.

I have been making this soup from last 15 years and out of all the soups I make, it is still a favorite of my family. Have fun and enjoy!

Egg Drop Soup

Ingredients for Russian Mushroom and Potato Soup

  • 5 tablespoons divided butter
  • 2 leeks leeks, chopped
  • 2 large sliced carrots
  • 6 cups of chicken broth
  • 2 teaspoons of dried dill weed
  • 2 teaspoons of salt
  • ⅛ teaspoon of ground black pepper
  • 1 bay leaf
  • 2 pounds of peeled and diced potatoes
  • 1 pound of sliced fresh mushrooms
  • 1 cup of half-and-half
  • ¼ cup of all-purpose flour
  • 1 sprig of fresh dill weed, for garnish

How to Make Russian Mushroom and Potato Soup

  1. First of all, melt the 3 tablespoons of butter in a large saucepan over the medium heat. Mix in carrots and leeks, and cook for 5 minutes. Pour in broth. Season with salt, pepper, dill, and bay leaf.
  2. Now mix in the potatoes, cover, and cook 20-22 minutes, or until the potatoes are tender but firm. After that remove and discard the bay leaf.
  3. Melt the remaining butter in the skillet over the medium heat, and saute the mushrooms 4-5 minutes, until it turned lightly browned in color. Stir into the soup.
  4. In the end, in a small bowl, mix the half-and-half & flour until it become smooth. Stir into the soup to thicken. Garnish each of the bowl of soup with fresh dill to serve it hot and enjoy.
