Friends, Tartine is just a latest fancy word for an open bread sandwich, but eating a ribbons of raw asparagus makes you feel oh-so-fancy, so I’m embracing the tartine. So, let’s make the one of the most delicious seasonal asparagus with roasted tomato tartine.

Ingredients for Shaved Asparagus and Roasted Tomato Tartine

  • 1½ cups (225 g) of cherry or grape tomatoes on the vine
  • 1 tablespoon of olive oil
  • 2 small ripe of avocados
  • Wedge of lemons
  • 6 asparagus spears
  • 4 slices of good & crusty sour dough bread
  • Sea salt

How to Make Shaved Asparagus and Roasted Tomato Tartine

  1. First preheat the oven to the 400°F (200°C). Now separate the tomatoes into clusters of three- four by snipping the vines carefully with the kitchen scissors. After that place them in a roasting pan and drizzle with olive oil, and sprinkle with some amount of a generous pinch of sea salt. And then roast in the oven for 10- 15 minutes, or until they collapse properly. After that remove them and cool to room temperature.
  2. Now scoop the flesh from the avocados into the bowl and mash gently with the help of fork. And then squeeze the wedge of lemon over the top and mash them again to keep it from browning.
  3. After that snap the woody ends off the asparagus spears, and then, by using a vegetable peeler, carefully shave the asparagus into the ribbons.
  4. And then to assemble, toast some bread slices. Spread each of the slices with avocado, top with the roasted tomatoes and asparagus ribbons, and serve them immediately.

Suggestion: You can slice the tartine into the smaller portions for an appetizer.
