Thai Red Curry Chicken Soup

Hello friends, welcome to Smooth Recipe. Today we are going to make Thai Red Curry Chicken Soup.

This Red curry chicken soup is one of my family’s favorite soups and this is the reason I adapted it into a soup. That way you will never miss any of the delicious sauce.

Ingredients for Thai Red Curry Chicken Soup

  • 2 tablespoons of red curry paste
  • 1 thinly sliced red bell pepper
  • One small chopped onion
  • 1 (14 ounce of) can coconut milk
  • 2 cups of shredded cooked chicken
  • 1 tablespoon of fish sauce
  • 3 cups of homemade chicken stock
  • 1 ½ cups of cooked basmati rice
  • 4 tablespoons of chopped fresh cilantro

How to Make Thai Red Curry Chicken Soup

  • First of all cook the curries paste in a large, heavy saucepan over the medium-high heat until the oil start to release, for 1 to 2 minutes.
  • Now add red pepper & onion and cook, stirring it until softened, for about 5 minutes. And then stir in coconut milk until it blended well. After that add fish sauce, and then add chicken stock.
  • Now reduce the heat to low and simmer for 12-15 minutes. And add cooked chicken & rice. Now stir over the heat until it warmed through. Add chopped cilantro right before the serving.
