Zucchini Soup

Ingredients for Winter Leek and Potato Soup

  • 2 tablespoons of butter, or more if needed
  • 2 leeks leeks, cleaned and chopped
  • ½ cup of chopped onion
  • 6 medium (2-1/4″ to 3″ dia, raw)s potatoes, peeled and cubed
  • 4 cups of chicken broth
  • 1 cup of half-and-half
  • 4 ounces of shredded Cheddar cheese
  • 1 tablespoon of chopped fresh parsley
  • 1 teaspoon of garlic powder
  • Salt and ground black pepper as per your taste

How to Make Winter Leek and Potato Soup

  1. First of all, melt butter in a pot over the medium flame heat. Cook and stir leeks and onion until the vegetables are tender, about 4-5 minutes.
  2. Now stir potatoes and chicken broth into the onion mixture; simmer until the potatoes are tender, for 20 to 25 minutes.
  3. After that pour half-and-half into the potato soup and continue to simmer until it slightly thickened, for about 15 minutes more.
  4. In the end, stir Cheddar cheese, garlic powder, parsley, salt, and black pepper into the soup until cheese is melted, for about 5 minutes.
