Hello friends, welcome to Smooth Recipe. Today we are going to make Zucchini Soup.

A very delicious soup which can be perfectly served in lunch or in dinner.

Winter Leek and Potato Soup

Ingredients for Zucchini Soup

  • 2 tablespoons of margarine
  • 2 medium (2-1/4″ to 3″ dia, raw)s peeled and diced potatoes
  • 8 medium (blank)s chopped zucchini
  • ¼ teaspoon of dried thyme
  • ¼ teaspoon of dried rosemary
  • 2 medium (2-1/2″ dia)s chopped onions
  • ½ teaspoon of dried basil
  • ¼ teaspoon of ground white pepper
  • 4 cups of chicken broth
  • 1 cup of whole milk
  • ¼ cup of dry potato flakes
  • 1 tablespoon of soy sauce
  • 4 tablespoons of chopped fresh dill weed

How to Make Zucchini Soup

  1. First of all, in a large frying pan, melt the butter or margarine; add onion & saute until translucent. And then add diced potato, thyme, zucchini, basil, rosemary, and white pepper, and cook for 4-5 minutes.
  2. Now in a medium-sized cooking pot, add the broth and bring them to boil. Add zucchini or potato mixture; reduce the heat and simmer about 15-17 minutes.
  3. And then when it cooked, puree in the food processor or blender in batches. Return to the cooking pot, add milk and bring them just to boil, but do not boil.
  4. In the end, add instant mashed potato flakes & soy sauce and stir them well. Adjust the seasonings as per your taste. Garnish with the dill weed. Serve the soup hot or chilled.
